Grilled Lemon Garlic Chicken with Vegetables
This flavorful and healthy dinner features juicy grilled chicken marinated in lemon and garlic, served with a side of roasted vegetables for a balanced meal.

Ingredients
Marinated Chicken
- 2 pcs Chicken breasts skinless, boneless
- 2 tbsp Olive oil
- 2 cloves Garlic minced
- 1 Lemon zested and juiced
- 1 tsp Dried oregano
- 1/2 tsp Salt
- 1/4 tsp Black pepper
Roasted Vegetables
- 200 g Broccoli florets
- 1 pcs Red bell pepper sliced
- 1 pcs Zucchini sliced
- 1 tbsp Olive oil
- 1/2 tsp Salt
- 1/4 tsp Black pepper
Instructions
- In a bowl, whisk together olive oil, minced garlic, lemon juice, zest, oregano, salt, and pepper. Add chicken breasts and marinate for at least 10 minutes.
- Preheat grill pan to medium heat. Grill chicken for 6-7 minutes per side until fully cooked.
- Meanwhile, preheat oven to 200°C (400°F). Toss broccoli, bell pepper, and zucchini with olive oil, salt, and pepper. Spread on a baking tray and roast for 15-20 minutes.
- Serve the grilled chicken with a side of roasted vegetables. Enjoy!
