Ingredients
  

Marinated Chicken

  • 2 pcs Chicken breasts skinless, boneless
  • 2 tbsp Olive oil
  • 2 cloves Garlic minced
  • 1 Lemon zested and juiced
  • 1 tsp Dried oregano
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Roasted Vegetables

  • 200 g Broccoli florets
  • 1 pcs Red bell pepper sliced
  • 1 pcs Zucchini sliced
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions
 

  • In a bowl, whisk together olive oil, minced garlic, lemon juice, zest, oregano, salt, and pepper. Add chicken breasts and marinate for at least 10 minutes.
  • Preheat grill pan to medium heat. Grill chicken for 6-7 minutes per side until fully cooked.
  • Meanwhile, preheat oven to 200°C (400°F). Toss broccoli, bell pepper, and zucchini with olive oil, salt, and pepper. Spread on a baking tray and roast for 15-20 minutes.
  • Serve the grilled chicken with a side of roasted vegetables. Enjoy!
