Ingredients
- 100 g quinoa rinsed
- 200 ml water for cooking quinoa
- 1 medium banana sliced
- 50 g blueberries fresh or frozen
- 30 g almonds chopped or slivered
- 1 tbsp honey or maple syrup for sweetness
- 1 tsp cinnamon optional
Instructions
- In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until quinoa is fluffy and water is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
- Divide the cooked quinoa between two bowls.
- Top each bowl with sliced banana, blueberries, chopped almonds, and a drizzle of honey or maple syrup. Sprinkle with cinnamon if desired.
