Ingredients
  

  • 100 g quinoa rinsed
  • 200 ml water for cooking quinoa
  • 1 medium banana sliced
  • 50 g blueberries fresh or frozen
  • 30 g almonds chopped or slivered
  • 1 tbsp honey or maple syrup for sweetness
  • 1 tsp cinnamon optional

Instructions
 

  • In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until quinoa is fluffy and water is absorbed.
  • Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
  • Divide the cooked quinoa between two bowls.
  • Top each bowl with sliced banana, blueberries, chopped almonds, and a drizzle of honey or maple syrup. Sprinkle with cinnamon if desired.
