Vegan Chickpea Salad
This vibrant chickpea salad is packed with protein and flavor. It’s perfect for a light lunch or as a side dish at dinner!
Ingredients
- 1 can chickpeas drained and rinsed
- 1 cucumber diced
- 1 cup cherry tomatoes halved
- 1/2 piece red onion finely chopped
- 1/4 cup parsley chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon salt to taste
- 1/2 teaspoon black pepper to taste
Instructions
- In a large bowl, combine the chickpeas, cucumber, cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or refrigerate for 30 minutes to let the flavors meld.
