- 1 cucumber diced
- 1 cup cherry tomatoes halved
- 1/2 piece red onion finely chopped
- 1/4 cup parsley chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon salt to taste
- 1/2 teaspoon black pepper to taste
In a large bowl, combine the chickpeas, cucumber, cherry tomatoes, red onion, and parsley.
