Ingredients
  

Zucchini Noodles

  • 2 large zucchinis spiralized

Creamy Garlic Spinach Sauce

  • 1 tbsp olive oil
  • 2 cups fresh spinach
  • 2 cloves garlic minced
  • 1/2 cup coconut milk or heavy cream
  • Salt and pepper to taste
  • Grated Parmesan optional

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add garlic and sauté until fragrant, about 1 minute.
  • Add spinach and cook until wilted.
  • Pour in coconut milk and bring to a simmer, stirring occasionally until the sauce thickens. Season with salt and pepper.
  • In a separate pan, lightly sauté the zucchini noodles for 2-3 minutes until just tender.
  • Serve the zucchini noodles topped with the creamy garlic spinach sauce. Optionally, sprinkle with grated Parmesan.
